Matthieu Boutet
A passionate man who thinks big!
Matthieu Boutet, director of °Fahrenheit Seven Val Thorens and Roc Seven Cap Ferret, is a born manager. Empathetic, versatile, and passionate, his unfailing good humor makes him one of the key figures of the °Fahrenheit Seven team. Discover his journey!
Blended passions: from the pen to the stove
A true son of the Bordeaux region, Matthieu was born in Pessac and grew up near Bordeaux with his two sisters. In his family, cooking holds pride of place! As a teenager, he began studying architecture in the Basque Country. But his first passion soon caught up with him, and at 18, he started his first summer seasons in the kitchen before discovering the mountains.

From chef's hat to cocktail shaker
For such a born creative, staying confined behind the stove was never an option! Matthieu discovered "the art of drinks" and flourished behind the bar. He crossed the Atlantic and spent a month at the European Bartender School in Las Vegas, where he fell in love with mixology. He quickly became Head Bartender and earned his first stripes in management.
Curious and ambitious, he set about climbing the ladder and taking on role after role. Under the wing of his first mentor, Laurent Frison-Roche, he learned to take on responsibility. After roles as a bartender, nightclub manager, then in accommodation, as assistant manager, and a year on Réunion Island, he returned to the mountains in May 2022 as F&B Manager at a 5-star hotel.


The ascent
Curious and ambitious, he set about climbing the ladder and taking on role after role to perfect his knowledge of the many professions in hospitality and catering.
"My father taught me to love a job well done, rigor and high standardsMy professional and personal experiences have taught me to constantly push my own limits. It's like climbing a mountain.You prepare mentally and physically, you're patient, you wait for the right window, and once you set off, you give yourself every means to succeed and keep surpassing yourself. Once you reach the summit, you want more! You want to aim higher, bigger – you never stop pushing yourself to reach excellence!"
Under the wing of his first mentor, Laurent Frison-Roche (then Managing Director of the Hôtel du Golf), he learned to take on responsibility – and the importance of being able to fill any position in a restaurant, from washing up to prep to the till. For his teams, you have to be ready to roll up your sleeves and never hesitate to help, whatever the task! One anecdote stuck with him:
"When I started out, I saw Mr. Frison-Roche greet every one of his 100 employees, one by one, without forgetting a single name – and that was from day one. Naturally, that leaves a lasting impression and earns everyone's respect, from commis to managers." A mindset of devoted leadership that has stayed with him ever since!

Always on the lookout for something new, his path then crossed that of °Fahrenheit Seven. As luck would have it, °Fahrenheit Seven Val Thorens, a lifestyle hotel that is both festive and upscale, was looking for its new director! The connection was instant and Matthieu grabbed the challenge with both hands. The 2022-2023 season allowed him to unite a close-knit team and breathe new energy into the whole hotel.
"After significant turnover at the start of the season, I was lucky to have a wonderful team by my side in key positions such as Kitchen, Service, Reception and Maintenance, which allowed us to enjoy a fantastic season. I thank them for it."
The same state of mind
After a year on Réunion Island, Matthieu returned to the heights in May 2022. He carried on as F&B manager for the Hôtel***** Grandes Rousses. It was after that summer season that he first crossed paths with the Maison °Fahrenheit Seven.
After several years in 5-star establishments, Matthieu was looking for something new, something that suited him better, greater versatility, and more besides… Matthieu has always loved good things, beautiful things, the quality of products and services, but something was missing… He was missing that freedom he was after, that lifestyle edge, blending a festive spirit with the quality of service of an upscale hotel.
With all of this combined, the connection with Maison °F7 was quickly made and Matthieu took the reins of °Fahrenheit Seven Val Thorens. This shared identity created real cohesion, whether in terms of working energy, the quality of the services offered, the restaurant menu or the music programming.
Despite significant turnover at the start of the season, Matthieu managed to bring together a true team and create a powerful energy at °Fahrenheit Seven Val Thorens. He was also backed by "superb heads of department".
